Pho Inspired Leftovers


Leftovers, blah! Unless it’s lasagna or black beans, ’cause they always taste better the next day!

I love having leftovers, I love the challenge. The fridge stuffed with bits of this and a little of that,  daring you to give the kids what they ate last night. “Do it! We can’t wait to see their atomic meltdown,” says the chicken broth as the pork chops smile in agreement.

Avoid meltdowns from the kids and your spouse’s fake smile and their re-assuring, “Just what I wanted, two-day old pork chops.”

Rise above leftover night and mix them together creating a new dish. Be your family’s Zordon and combine all those foods to create a Megazord that will strike down those meltdowns faster than you can say G0 Go Power Rangers!

  • 2 cups Broth
  • 8 oz. Pork
  • .5 cup Spinach
  • 1 Egg
  • 1.5 cup Frozen Cauliflower Rice
  • 1 tbsp Butter
  • 1 tbsp Olive Oil
  • 1 tbsp Garlic
  • Salt and Pepper
