Keto No-Carb Pork Rind Meatballs over Creamy Cauliflower Soup


A good meatball is like a good shot of espresso, having just one is enough to lose yourself in their magnificence, but having four or five will transport you to a whole other spiritual plane.

First things first, throw out those bread crumbs and bring on the rinds! Since we are giving this recipe the Keto Eye for the Straight Recipe make over, Pork Rinds are used instead of bread crumbs. Next, let’s hit up some fat. The butter, heavy cream, mayo, and avocado oil dressing, makes this dish super rich helping you hit your daily fat while on the Keto Diet.

My favorite thing about making these bountiful balls of meat is how versatile they are. Place ‘em over a bed zucchini noodles, add ‘em to chicken broth, or chop ‘em up and toss ‘em into your morning scramble; whatever you choose, your taste buds will thank you for adding these meatballs to the mix.

The recipe will make about 6 servings.

1 Serving = 1.5 cups of Creamy Soup with 2 Pork Rind Meatballs on top.

So, in order to make fantastic meatballs I start with fresh ground meat. Check out the video below to see how it’s done:

  • 1.25 lb  Porkchops
  • .5 cup Heavy Cream
  • .5 cup Chosen® Foods Lemon Garlic Avocado Oil Dressing
  • 2.5 tbsp Mayonnaise
  • 2 tbsp Olive Oil
  • 1.5 tbsp of Minced Garlic
  • 2 tbsp Paprika
  • 1 tbsp Turmeric
  • 1 tbsp Salt
  • 1 tbsp Pepper

After the meat has marinaded in all that goodness, it’s time to get cooking!

FOOD PROCESSOR/HAND MIXER To finely chop the Pork Rinds


  • 9 cups Frozen Cauliflower Rice
  • 4 Strips of Thick Cut Bacon (Keep the  rendered Fat)
  • 1.5 cups Chicken Broth
  • 1.5 cups Heavy Cream
  • 1 cup Shredded Mozzarella
  • 1 cup Shredded Parmesan
  • 2 tbsp Butter
  • 2tbsp Olive Oil


  • 1.25 lbs Ground Pork
  • 1 Egg
  • .75 cup Finely Ground Pork Rinds
  • .5 cup Chopped Onion
  • .5 cup Parmesan
  • .5 cup Heavy Cream
  • 2.5 tbsp Italian Seasoning
  • 1 tbsp Salt
  • 1 tbsp Pepper
