Keto Fluffy Pancakes

Making a quick and easy Keto breakfast can get a bit boring. Scrambled eggs, over easy eggs, scrambled eggs with bacon, over easy eggs with bacon, scrambled eggs with cheese, over easy eggs with cheese…

Don’t get me wrong, eggs are outstanding and easy to make. I love eggs so much the Egg Diet is a regular thing for me and I even made a blog and video about it 🙂 https://elmoodiefoodie.com/the-egg-diet-recipes-6-eggs-5-ways/

But you know – every once in a while we want to get a little crazy and try something different.

The challenge however is creating something that’s as easy as eggs and as equally nutritionally balanced, hearty, and delicious.

The perfect solution are these Keto Pancakes!

El Moodie Foodie Keto Fluffy Pancakes

Super easy because once the mix is made it’ll live in the fridge for up to three days. Wake up and the mix is ready to go, just heat up the griddle and drop on a spoonful.

These bad boys are nutritionally balanced and hearty because they’re made with whole fat greek yogurt, almond flour, and coconut flour. Heavy cream will help reach your keto fat macros, or if you want to drop the caloric intake, just swap heavy cream for almond milk.

This Keto Pancake Recipe is delicious because the smell of coconut hits your nose right before every bite. The whole fat greek yogurt keeps the inside moist while the almond flour allows them to get nice and fluffy.El Moodie Foodie Keto Fluffy Pancakes No syrup needed on these Keto Pancakes, just pull ‘em off the griddle and get ready for your tastebuds to tango with every bite.

Okay, enough of my sales pitch, time to make what I am sure will be your new favorite pancakes!

Check out the video above to see how these beauties are made. Ingredients are below, happy cooking!
